Both Jason and Nina were kind enough to share their experience getting a mobile food business off the ground and running, along with insights into their backgrounds and the inspiration behind the unique food concept.

Food on the RunFugoFood - Truck is cooking up their twist on a Mexican classic, using ingredi- ents that stay true to their Asian roots. Their tofu taco, yes tofu, uses deep-fried tofu sautéed with carrots and miso glaze, bringing a tangy twist on a traditional taco. Topped with crunchy cabbage and a parmesan-like Mexican cheese, cotija, this taco is well worth searching the city for their fabulous food truck.

March 13, 2013 that I first heard rumors that  Fugo Food Truck  was about to hit the road. Six weeks later they were listed on FoodTrucksIn, and a few weeks later on May 18, bingo! Their opening! Then, my first meal at Fugo Food Truck was on May 28th. It was a memorable for more than just the inventive, fresh, tasty meal.

The FuGo Food Truck: Where Asian & Latin Cuisines Collide

One truck in particular, FuGo Food Truck, has been catching my eye (and stomach) as of late. Their menu is composed of a number of Asian and Latin inspired creations and the results are mouth-watering. On a recent trip to the Providence Flea, I made it a priority to visit Jason and his wife Nina for some good food and conversations. After chopping it up with the FuGo fam, I managed to discover that they are still infants in the food truck game (they’ve been operating for a little over 2 months).

Have you had your Fusion Experience?

Normally I don't take the time to write much about places I eat at, but this is one time that I thought I should; and who knows, it might be the beginning of some new hobby of mine! With that said, my wife had mentioned this new food truck, called FuGo, and thought we should check it out. For those of you who have been living under a rock for the last few years, food trucks have grown so much in popularity that today even shows like "Man vs Food," among others, are featuring food trucks.

I heard the comforting hum of a generator – a sure sign of an impending discovery. Soon we saw a small crowd of people gathered around a brightly lit truck emblazoned with the letters FuGo (short for Fusion Gourmet). I felt a rush of excitement, like a butterfly hunter who’s potentially just stumbled upon the rare pussy cat swallow-tail (if you know what I’m talking about, you’re clearly over 40).
